Some of my best friends have the cutest kids ever that each earned little nicknames at their preschool. Their son's was "chicken nugget." When I found this out, I said aloud "wow, I wish someone would give me a cool nickname like chicken nugget," and he lit up and said "you can be salmon!"
A pet peeve of mine is when you go to a blog post looking for a recipe and you have to scroll through story after story of why that recipe means a lot to that blogger, yada yada yada. My point in the above short story is that I was honored — thrilled!— to be named salmon. Of all the proteins it's definitely the coolest one. Am I right?
Here you go. Here is my favorite way to prepare salmon. It's easy, healthy, quick, has easy-to-find ingredients, and is DELICIOUS. Make it, share it with someone who also thinks salmon is super cool, and enjoy!
Blake's Favorite Salmon
1 1/2 lb salmon filet
1Tbsp fresh parsley, chopped (plus a few extra sprigs for garnish)
4 Tbsp olive oil
2 small lemons, 1 for juicing and 1 for slicing
2-3 garlic cloves, pressed
2 Tbsp Dijon mustard
1/4 tsp salt
1/4 tsp black pepper
• Preheat oven to 450.
• Make the sauce! Combine the olive oil, chopped parsley, juice of 1 lemon, dijon mustard, garlic, salt and pepper and whisk until well combined.
• Line a baking sheet with parchment paper.
• Place salmon on the baking sheet and parchment paper, skin side down.
• Spoon out about half of the marinade / sauce onto the salmon and make sure to cover it evenly, even the sides of the fish. Make sure you're keeping your spoon clean and away from the fish and don't contaminate the sauce, because we'll use the remainder of the sauce for drizzling on the salmon at the end.
• Slice the 2nd lemon and top the fish with a few slices.
• Bake for approximately 15 minutes, or until the fish is done and flaky. Don't overcook the salmon... I always check the fish around 12 minutes, but it usually needs to go to for about 15 minutes of total cooking time. (A meat thermometer helps. I have this one and takes a lot of the guesswork out of cooking meat. It even has a chart on the back of the device with safe cooking times for all meats.)*
• When it's done, remove the fish and place it on plates. Top each piece with a drizzle of the sauce, and finish with a little sprinkle of parsley on top.
Serve it with something good and green, like some roast veggies or a big fresh salad, and— of course— a good glass of wine.
